1...Firstly, don't remove the head straight away!!! You need to remove the transparent spine (or quill) by running a finger along the inside of the mantle, being careful not to grip too heavily in the middle (thus busting the ink sack) but instead holding it by the tip or carefully by the base of the mantle.

2... Next, grab the head, while holding the tip of the mantle and PULL!!! Most of the guts will come out in one neat pile (including the ink sack which is the green/pearly bit).

3...Next you need to remove the wings and skin. You need to make an incision with a knife along one of the wings. Then run a finger under the wing from the tip to the base of the hood. It should then peel like an orange, with the skin coming off in one piece, including the other wing.

4...To give the mantle a final clean up, turn it inside out and remove any remaining gunk.
5...So you are left with two clean wings and a clean mantle. Enjoy!!
6... don't bother trying to remove the skin though. Don't forget to "pop out" the squid's beak (similar to the beak of a parrot!). The beak should easily come away from the surrounding legs and can be discarded.

Biasa potong 4 & lepas tu buat garisan kat bahagian putih sotong tu. Selain masak kari, masak sos tomato/cili ada serbuk ketumbar, sotong pun sedap buat sambal goreng & goreng ala KFC. Kalau buat goreng ala KFC, tak payah potong, cuma mati air je sp. tak meletup2 bila digoreng nanti.

SOTONG GORENG TOMYAM
Bahan
500 gm sotong sedang
3 biji kentang
3 helai daun limau purut
3 tangkai cili besar
3 tangkai serai
1 labu bawang besar
1/2 cawan air asalm jawa
5 tangkai daun ketumbar
2 biji buah tomato
minyak
garam
Bahan tumbuk
5 biji cili api
5 biji cili merah
3 ulas bawang merah
3 ulas bawang putih
Cara
1. Panaskan minyak dan tumiskan bahan tumbuk sehingga wangi.
2. Masukkan sedikit air dan sotong. Gaulkan rata. Gunakan api perlahan
3. Masukkan daun limau purut,, serai.bawang besar dan semua bahan di atas.
4. Masukkan air asam .
5. Bila nampak kering air, masukkan sotong dan kentang. Gaulkan rata.
6. Angkat dan hiaskan dengan daun ketumbar yg dipotong.
