Gingerbread Cookies! :-D

Elu everybody   

Arinih Cikkiah nak share recipe gingerbread cookies with semua member forum. cookies ni slalu org buat time christmas..kdg2 dorg buat bentuk org maka jadik la gingerbread man ( mcm dlm cite Shrek tu ) pastuh ada yg buat bentuk rumah..so jadikla Gingerbread House.. buat nya senang je..ni recipe dia:


Ingredients:
400 g sifted all-purpose flour
180 g unsalted butter (room temperature, softened)
1 large egg
110 g molasses
115 g brown sugar, packed
2 tsp ground ginger
2 tsp ground cinnamon
1/2 tsp ground cloves
1/4 tsp ground nutmeg
1/4 tsp fine ground black pepper
1/2 tsp salt
1/2 tsp baking soda

Royal Icing
egg whites
confectioners sugar (powdered sugar)
1/2 teaspoon lemon juice

How to make:

1. Cream butter and sugar until fluffy. Add in egg and molasses and mix well.
2. In a separate bowl, sift together flour, baking soda and spices. Add into the butter mixture and mix well.
3. Refrigerate dough for at least one hour.
4. Take out dough from fridge and roll out into an even thickness. TIP: To get even size cookies, use a cookie cutter and roll out the dough in between two magazines of the same thickness. How--> place two magazines on the table and leave out a space in the middle to put the dough. Make sure the width in between is slightly smaller than your rolling pin. Place cling wrap/saran wrap on top of both the magazines and dust the middle with flour. Place dough in the middle and roll until your rolling pin touches the surface of the magazines. Voila! Even cookies! :horay:
5. Cut out cookies and bake in a preheated oven of 180deg until slightly browned. If you're doing your cookies thin then watch out the cookies when baking. You don't want to get burnt gingerbread men afterwards now, don't cha? ;-)
6. Leave to cool completely before icing it with royal icing. To make the royal icing simple whisk the egg until soft peak forms then add in the icing sugar. I didn't put the exact amount because it depends on how much you want to make. You can refer to other websites for more accurate royal icing recipe.
7. Keep in air-tight containers.

ps: If the dough is a bit too soft to shape, add in a bit more flour to the mixture


yang tang molasses tu..ni bentuk dia:


molasses ni is a kind of syrup made from sugar cane..very pekat and color dia seakan-akan hitam. kalu tade bleh ganti ngan honey cuma rasa dia kurengg sket kot..bleh beli kat imported goods store..maybe TMC kat bangsar tu pon ada jual rasa nye.

try la..sekali sekala buat cookies omputih lak :-)

ha me buat ginger bread ni utk krismas isnin ni..
tapi resepi me cuma guna tepung, ginger, cinnamon, bikarbonat, garam, vegetable shotening dan molasses.
(Resepi ad akat tread french langauge)

Untuk ising dia..
kalau putih.
Cuma gula castor bancuh dengan air panas sikit.
Kalau nak warna, letak pewarna.

ic...kita letak byk sket spice sbb saja nk kasik rasa kaw-kaw sket ada certain tu yg letak cayenne pepper lagi!

senang la plak icing yg faraway guna ek.. tak penah lak try.. akan dicuba nanti! thanks for sharing!

cikgu kelas memasak me lah ajar, she ajar camana nak masak dan jugak camana nak jimat kos memasak.
so  dari beli banyak bahan untuk buat satu bahan.. tapi hasil sama.. so baik buat yang murah kosnya....

Ginger bread ni best makan#minum dengan susu...
dan ginger bread ni jugak buat lubang, letak tali untuk sangkut kat chrismas tree.

Saya ni dari sehari ke sehari nak try buat Gingerbread cookies ni, tapi selalu saje tak ada masa.
Bahan-bahan semua dah beli termasuklah molasses and shortening.

Pn Faraway dan CikKiah,
How long does it take to make the cookies?
I mean from preparing the ingredients up to taking the cookies out from the oven?
And how many of the cookies can be made?
Bukan apa, nak plan my time out to bake them.

Yang ni I buat masa Hari Raya. Special request dari my husband. Cuma gingerbread cookies and not gingerbread man. Maybe Xmas ni pulak buat gingerbread man. Yang syok nye about this cookies, boleh main icing kat atas.

My gingerbread cookies tak pakai molasses. Dia cuma pakai golden syrup. Resipi dari cookery book The Perfect Cookbook.

125 g unsalted butter
1/4 cup golden syrup
1/3 cup lightly packed brown sugar
2 cups plain flour
1/4 cups self raising flour
1 tbsp bicarbonate soda
1 tbsp ground ginger
1/2 tsp mixed spice
salt
1 egg, lightly beaten

Place butter, golden syrup and sugar in a small saucepan over low heat. Cook, stirring until the butter has melted and the mixture is smooth. REmove from the heat and allow to cool.

Sift both flours, the bicarbonate of soda, the spices and a pinch of salt into a large mixing bowl and make a well in the centre. Pour in the melted butter mixture and the beaten egg and mix well.

Turn out onto a lightly floured surface and knead until smooth. Wrap in a plastic wrap and refrigerate for 30 minutes.

Preheat the oven to 170 deg. C. Line tow oven trays with baking paper.

Roll out the dough between two sheets of baking paper to a thickness of 5mm. Cut out shapes with cookie cutters and bake for 8-10 minutues, or until firm and golden brown. Allow to cool on a wire rack.

To decorate : your biscuits, beat 1 egg white with an electric mixer until foamy. Garadually add 1 tsp of lemon juice and 1 1/2 cups of sifted icing sugar, beating all the while until the mixture is thick and smooth. Tint the mixture with a couple of drops food colouring. Attached a fine nozzle to a piping bag and pipe decorative shapes on the biscuits.

me.. masa..
lepas uli kena simpan dalam peti ais sejam...
lepas keluar dr peti ais... cuma dalam oven dalam 5-7 minit aje sbb kalau over masak, dia keras..

nak buat dough nya kejap je. it's like making any other cookies..kalau ada mixer maybe dlm 10-15 minutes. but you do have to refrigerate them at least an hour. mcm kita buat dough nya a day ahead. esok tu baru bakar.

bakar plak jap jer..but it also depends on how thick or thin your cookies are. kalu nipis2 jer then 180deg tu dlm 5-8 minutes.
like one batch of my recipe tu kalu pakai cetak yg besar 5cm++ tu dpt la dlm 30-40 cookies. maybe lebih kot sbb kita pon tak bape kira sgt

to mallanhead, yup it's also okay to use golden syrup.. i chose molasses sbb ni first time buat, so saja nk tau apa rasa dia kalu pakai molasses tu.. btw, your cookies nampak sedap..icing pon kaler2 gituh

nampak sedap semacam. harus cuba ni. tapi biscuits ni sedap makan kalau dia crispy atau kena buat tebal sikit?

My gingerbreads cookies untuk chrissie hari ni. Sebab hari ni chrissie, I buat gingerbread man dan my anak2 seperti biasa tolong bubuh royal icing kat atas.

?v=0

Gingerbread ni kalau tak letak icing kat atas tak berapa sedap. Icing tu balance rasa ginger dan lain2 rempah dlm bickie.

maisya dah cuba resepi ni....tapi maisya guna honey gantikan golden syrup tu.



nilah hasil kerja org malas decorate....icing ni lama ke nak kering? awatnya my icing cam tak menjadik je...masih melekit-lekit lagi, must be my mistake masa beat icing tu.

Wah bestnya...Akak baru jumpa thread ni.Sebab memang dah lama nak buat Ginger Snaps (Cookies) ni.Tapi bila ada geng kata molasses tu ada jual kat sini tu yang bertambah semangat nak buat.Ni semua gara gara makan Noraini's Ginger Cookies le.Bila nak beli lagi sampai sekarang ni tak jumpa jumpa.

Not sure kenapa your icing tak melekat. So far I biarkan cookies dng aising tu kering atas rak dan simpan kat dlm tin. Maybe kat Aussie ni, humidity dia kurang. Jadi apa pun cepat kering.
