ungkep kuwi memang masakan kegemaran turun temurun keluorgoku...ora kiro la...ayam,daging iwak....lek diungkep memang enak..sebab rempah he iso sebati karo bahan sing dimasak...tahan suwi...

nyong nek ungkep ayam kampung. Kalingan nyong.. cilik cilik nyong tankap ayam njero reban..

AYAM UNGKEP

Ayam 1 ekor (dipotong 12 hingga 15)
Minyak masak (untuk menggoreng) 1 liter
Rempah:
Ketumbar 5 sudu besar
Jintan halus 1 sudu besar
Halia sepotong (1 inci)
Bawang merah 4-5 biji
Bawang putih 1-2 ulas kecil
Sebuk kunyit 1 sudu besar
Garam  
Cara:
Tumbuk ketumbar dan jintan (guna lesung jangan blend)sehingga lumat. Kemudian tumbuk pula bawang merah/putih/halia dalam campuran ketumbar/jintan yang telah lumat tadi sehingga sebati.

Gaulkan bahan yang telah ditumbuk tadi dengan ayam sehingga mesra. Masukkan sedikit serbuk kunyit supaya nampak kekuningan dan bubuh garam secukup rasa.

Goreng setengah bahagian bahan di atas dalam kuali yang berisi 0.5 liter minyak masak dan 2 cawan air (buat 2 kali goreng). Api hendak sentiasa sederhana. Tutupkan kuali dengan penutup (awas air panas dalam kulai terperecik keluar). Kacau sekali-sekala. Masakan sedia untuk diangkat apabila air sudah agak berkurangan (lembab dan likat). Sekiranya anda suka ayam lebih garing, tunggu sehingga air agak kering.

Koyok ney ayam ungkep ki mayar di gawe...rempah2 bioso waey....jajal lah gawe kak pinat...nek dadi ley ngawe, biso ngilang key virus M....
