???????????? Delicious Banana Cream Muffins
Ingredients:
3 ripe bananas, mashed
1/2 cup sugar
1/3 cup melted butter
1 egg
1 teaspoon vanilla extract
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 1/2 cups all-purpose flour
1/2 cup chopped walnuts (optional)
1/2 cup vanilla yogurt or cream cheese frosting
Directions:
Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
In a large mixing bowl, combine the mashed bananas, sugar, melted butter, egg, and vanilla extract. Mix until smooth.
In another bowl, whisk together the baking soda, baking powder, salt, and flour.
Gradually add the dry ingredients to the wet ingredients, stirring just until combined. Do not overmix.
If using, fold in the chopped walnuts.
Divide the batter evenly among the muffin cups.
Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
Allow the muffins to cool completely before adding a dollop of vanilla yogurt or cream cheese frosting on top.
