Gluten-Free Black Forest Cupcakes Recipe
Ingredients:
For the Chocolate Cupcakes:
1 cup gluten-free all-purpose flour (Bob's Red Mill 1:1 or similar)
1/2 cup unsweetened cocoa powder
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup granulated sugar
1/2 cup vegetable oil
2 large eggs
1 teaspoon vanilla extract
1/2 cup milk (or dairy-free milk)
1/2 cup boiling water
For the Cherry Filling:
1 cup cherry pie filling (gluten-free) or fresh cherries, pitted and chopped
1 tablespoon cornstarch
1 tablespoon water
For the Whipped Cream Topping:
1 cup heavy whipping cream
2 tablespoons powdered sugar
1/2 teaspoon vanilla extract
For the Garnish:
Dark chocolate shavings
Fresh cherries (optional)
Instructions:
1. Make the Chocolate Cupcakes:
Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners.
In a medium bowl, sift together the gluten-free flour, cocoa powder, baking powder, baking soda, and salt.
In a large mixing bowl, whisk together the sugar, vegetable oil, eggs, and vanilla extract until smooth.
Gradually add the dry ingredients to the wet mixture, alternating with the milk, beginning and ending with the dry ingredients. Stir until just combined.
Carefully pour in the boiling water, stirring until the batter is smooth (it will be thin).
Divide the batter evenly between the cupcake liners, filling each about 2/3 full.
Bake for 18-22 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
Allow the cupcakes to cool completely on a wire rack.
2. Make the Cherry Filling:
In a small saucepan, combine the cherry pie filling (or fresh cherries), cornstarch, and water over medium heat.
Cook, stirring constantly, until the mixture thickens slightly, about 5-7 minutes. If using fresh cherries, they should break down into a syrupy filling.
Remove from heat and allow the filling to cool.
3. Prepare the Whipped Cream:
In a chilled mixing bowl, beat the heavy cream, powdered sugar, and vanilla extract together using an electric mixer.
Beat until stiff peaks form, making sure not to overbeat.
4. Assemble the Cupcakes:
Once the cupcakes have cooled, use a paring knife or cupcake corer to remove a small portion of the center of each cupcake.
Fill each cupcake with 1-2 teaspoons of the cherry filling.
Pipe or spoon the whipped cream on top of each filled cupcake.
5. Garnish and Serve:
Garnish the cupcakes with dark chocolate shavings and, if desired, a fresh cherry on top.
Refrigerate the cupcakes until ready to serve.
Serving:

These delightful truffles combine the creamy richness of white chocolate with the tartness of dried cranberries and the crunch of pistachios. Perfect for gifting or enjoying as a sweet treat!
Ingredients:
- 1 ½ cups white chocolate chips ????
- ½ cup heavy cream ????
- ½ tsp vanilla extract ????
- ½ cup dried cranberries, chopped ????
- 1 cup pistachios, finely chopped (divided) ????
- 2 tbsp butter, softened ????
Instructions:
1️⃣ Make the Ganache:
In a small saucepan, heat the heavy cream until it just begins to simmer (don’t boil). Remove from heat and pour over white chocolate chips in a heatproof bowl. Let it sit for 2-3 minutes, then stir until smooth.
2️⃣ Add Flavor:
Stir in vanilla extract and softened butter until fully combined. Gently fold in chopped dried cranberries and ¼ cup of the finely chopped pistachios.
3️⃣ Chill:
Cover the mixture and refrigerate for 2-3 hours, or until the ganache is firm enough to handle.
4️⃣ Form the Truffles:
Once the ganache is firm, use a small scoop or your hands to roll the mixture into bite-sized balls.
5️⃣ Coat with Pistachios:
Roll each truffle in the remaining chopped pistachios to coat them evenly.
6️⃣ Serve:
Place the truffles in an airtight container and refrigerate for at least 1 hour before serving.
