Terangkat Habis, Ikan Jaket Sumbat Berasap Untuk Yang Gilakan Pedas

Memang 'terangkat' habis selera bila hidangan depan mata semuanya pedas-pedas belaka.


Orang kata, sampai berasap telinga namun kenikmatannya memang tidak dapat dinafikan lagi, padu!


Kali ini, jom cuba Resipi Ikan Jaket Sumbat Berasap, sesuai sangat bagi mereka yang gilakan pedas. Cuba sekali, rasa nak tambah berkali-kali.


Bahan-bahan:
Ikan cencaru/jaket 4 ekor
Bawang merah 10 biji, bawang putih 5 biji
Halia seinci
Lengkuas seinci
Serai 4 batang
Lada burung( kecil) 10 batang
(semua diatas kisar kecuali ikan)
Air belacan
Air asam jawa
Garam + kunyit untuk perap
Gula
Limau kasturi (tambahan)





Cara-Cara
1)Siang dan belah ikan seperti di gambar




2)Letak sebut kunyit dan garam




3) Bahan-bahan untuk dikisar




4) Kisar semuanya tapi jangan halus sangat sebab nak teksturnya kasar sedikit



5) Sumbat dalam ikan. Tinggalkan sedikit untuk dibuat kuah nanti



6) Perap dalam 3 jam dan goreng sehingga garing



7) Untuk kuah: Panaskan minyak dan masukkan semua bahan yang dikisar tadi




6) Dah naik bau msukkan pula air belacan dan air asam jawa




7) Tunggu hingga kering. Masukkan garam dan gula. Masukkan ikan yang dah digoreng tadi



8) Siap!

Ikan sumbat gini i lagi suka tumbuk kasar2 cili kering campur bwg2 n tomato dadu2..buh asam jawa gak ngn blcn.sedap.ada orang buh kelapa parut jugak.

My mom klo ikan cencaru dia tk pernah sumbat segala mala ni tapi dia salu siang belah belakang gak buang segala dlm tu..then basuh bersih2 buh garam n perap 1ari.garam je xyah kunyit.nk mkn terus goreng je.pun sedap.klo tkut masin sgt lalukan air je pastu goreng.

Kami pulak: Tumbuk segenggam  kelapa parut yg digaul dgn asam jawa dalam 3 cubit....tambah garam...gula...agak2 ehh... bila kelapa dah agak hancur...masuk chili merah/padi--4-5 bijik...Tumbuk sampai chili agak2 lumat....then masuk kan bawang besar sebijik--sederhana besaqnya--- tumbuk jgn sampai lumat... then sumbat dim ikan...lumur ikan dgn garam...goreng... angkat dan tuang minyak yg itam2 tu ataih ikan.... sedap sambai kelapa ni berulamkan pucuk gajus....daun pudina...
