BAHULU RECIPE
Ingredients:
3 egg yolks
4 egg whites
100gm sugar
Half teaspoon vanilla essence
100gm wheat flour
1 tablespoon tapioca flour
Quarter teaspoon baking powder

Method:
1. Sieve wheat and tapioca flour together with baking powder.
2. Whisk the eggs and sugar until stiff.
3. Add the vanilla essence.
4. Fold in 20grms of sifted flour with 100ml of egg batter. Preheat oven to 250 degrees centigrade. Lightly grease the mould (to prevent the bahulu from sticking) and spoon in batter. Do not fill to the top. Bake bahulu for about five minutes.

Alternatively, you can bake bahulu the traditional way 鈥

1 cawan tepung jagung
3 sudu udang kering (ditumbuk atau dimesin halus)
1 biji kelapa (diambil 2 cawan santan)
100 gram ikan bilis besar (dibelah dua)

rice flour
plain flour
sesame seeds


b. Tepek resipinya
Ingredients
1 cup plain flour
1 cup rice flour
1/2 cup roasted chickpea (dalia or phutana) flour
1 tbsp. sesame seeds
2 tbsp. oil
2 green chillies ground
1/4 tsp. soda bicarb
salt to taste
oil to deep fry

Method

  • Sieve plain and rice flour together with soda bicarb.
  • Tie in a bigh mslin cloth.
  • Place in a steel vessel and cover with tight lid.
  • Place in a pressure cooker and steam (4 whistles).
  • Remove and sieve again.
  • Mix all other ingredients except oil to deep fry.
  • Make a medium soft dough.
  • Use a murukku press and press out circles.
  • Use 4" plantain leaf squares or a small plate to press onto.
  • Take care to grease the plate or leaf.
  • Carefully invert murukku into hot oil.
  • Deep fry on low medium flame till golden.
  • Drain and cool. Store in a tightlidded container.
  • Fry a few murukkus at a time.
Variations:
Add crushed ginger and garlic if desired.
To make extra spicy, add 1/2 tsp. crushed red chillies.

Making time: 1 hour.
Makes: 25-30 murukkus
Shelflife: 2-3 weeks.

Bahan-Bahan:
1 cawan tepung gandum
3 cawan tepung beras
3 sudu serbuk jintan manis
3 sudu serbuk jintan putih
1 sudu besar serbuk kayu manis
6 butir telur
10 ulas bawang merah
350 gm planta
1 liter air
Sedikit minyak untuk menggoreng
Cara:
Gaul tepung gandum dengan tepung beras, telur dan planta sehingga sebati.

Bahagikan adunan tadi kepada dua bahagian, bahagian yang pertama dibancuh dengan air dan bahagian yang kedua dibancuh dengan rempah-ratus dan campuran bawang yang telah dikisar halus.

Canaikan bahagian yang pertama hinga nipis dan asingkan. Kemudian dadarkan bahagian kedua sehingga ia nipis.

Tindankan kedua-dua adunan tadi dan gulung sehingga ia padat. Simpan adunan tersebut ke dalam peti sejuk selama lebih kurang 1 jam.

Keluarkan adunan dan potong nipis dan seterusnya bolehlah digoreng di atas api yang sederhana panas.
