Recipe : Beef curry - Resipi Gulai Daging

I bought some lovely beef shin the other day and wasn抰 sure how to cook them as these meats are very tough. So, today, I thought of cooking curry but realised that I had ran out of curry powder. Not daunted, I decided to grind my own spices, something which I have never done before because I thought it is impossible to do.

However, my grounded spices turned out so lovely. I have a blender which comes with a grinder. So, I threw in handfuls of poppy seeds, mustard seeds, fennel, cummins, black pepper, white pepper, cardamons, cloves and whatever is in the pack of mixed spices I had.

Then, I blended large amount of onions, garlics, ginger, lemongrass and dried chillies.



Look at the mean looking curry paste! I added some screwpine leaves and curry leaves. I notice that those mamak nasi kandar curries always have daun pandan in their curry gravy. So, I followed suit. I discovered that using a tablespoon or two of ghee in curries make them taste so much more authentic.

I used the beef, two potatoes, three tomatoes plus a box of 200 ml coconut milk. Simmer them until the meats are soften. Of course, I use the pressure cooker which cuts down cooking time a lot.



And here it is, the most fiery bowl of beef curry with tender pieces of beef, soft potatoes and tomatoes that have given the gravy the reddish colour and also thickens it.



It is not that difficult to cook curries from scratch after all. The freshly grinded spices give the curry a really nice aroma without the standard smell of the curry powder.
This curry and the tomato rice I cooked taste sooo good and makes perfect combination.

1 inci lengkuas
1 batang serai
2 sudu ketumbar biji
1 sudu kecil jintan manis
3 ulas bawang putih
6 ulas bawang merah
1 sudu kecil lada sulah
garam dan serbuk perasa secukup rasa

Cara Membuatnya :

Ayam dibelah empat dan cuci bersih-bersih. Semua bahan yang lain digiling hingga lumat kecuali lengkuas dititik-titik.

Semua bahan-bahan yang sudah digiling itu dilumurkan pada ayam tadi biarkan selama 10 minit. Dikukus sehingga masak.

a)Ikan Merah
b)Sweet Sour Ikan merah
Bahan-Bahan yg diperlukan:
seekor ikan merah
sos cili
sos tiram
sos tomato
cili besar
air limau nipis
nanas(potong dadu)
timun(potong dadu)
sedikit garam
sedikit ajinomoto
sedikit gula
sedikit mayonis
sedikit honey (madu dlm botol)

Cara masakan:

1)gaul ikan dengan tepung dan air serta kunyit.
2)goreng hingga setengah garing.
3)bila sudah garing keluarkan dari kuali
4)guna kuali lain masak perencah dia pula..
5)masukkan sos cili,sos tiram dan sos tomato.
6)masukkan nanas dan timun.
7)kemudian masukkan sedikit garam,gula dan ajinomoto secukup rasa.
8)ambil ikan yg telah digaringkan , celupkan kedalam perencah tadi
9)biarkan ikan direndam dalam perencah dalam 3 minit, bagi menyerap rasa
10)sedia untuk dihidang.

b.LAKSA ASAM
1 bungkus laksa (basah/kering) - dicelur dahulu
1 kati ikan curut/sardin (ikan temenung pun boleh tapi tak berapa sedap)
15-20 biji cabai kering - dikisar
2 biji bawang besar- dikisar
1 batang serai - dikisar
Sedikit belacan - dikisar
Sedilit asam keping/asam jawa
1 biji timun
1 pokok daun salad
Sedikit daun pudina & daun cenohong
1 biji bunga kantan
1 biji cili hijau & cili merah
1 biji bawang besar
Garam

Cara-caranya :-

1. Ikan dibersihkan terlebih dahulu dan direbus.
2. Keluarkan ikan dan asingkan isi ikan dengan tulang.
3. Air rebusan ikan tadi ditapis ke dalam periuk yang
lain dan bolehlah nyalakan api.
4. Masukkan bahan yang telah dikisar tadi.
5. Masukkan pula sedikit bunga kantan (dengan batangnya sekali)
serta daun cenohong. Perah air asam atau masukkan asam keping.
6. Tulang ikan dikisar halus dan ditapis ke dalam periuk tadi.
7. Akhir sekali masukkan isi ikan ( boleh juga dikisar ) serta garam.
8. Laksa yang telah siap dicelur bolehlah dimasukkan timun,
daun salad, bawang besar, cili, daun pudina serta bunga kantan
yang telah dihiris halus.
