Gula Melaka (Coconut Sugar) and
Coconut Milk Agar-agar (Jelly) Recipe
Sweets & Desserts Recipes  

   

Ingredients:

1 cup
2 cups
1 cup
2 cups
1/2 tsp
softened agar-agar strands.
water
gula-melaka (Coconut sugar)
coconut milk from 1 coconut. (Grated, white)
salt


Method:

In large deep saucepan soak the agar-agar strands in 2 cups water. Then bring to the boil on low heat, and simmer till strands have dissolved.
Add 3/4 cup gula-melaka syrup and when boiling add the 2 cups coconut milk and salt. Taste for sweetness and, if too sweet, add another 1/4 cup water. If it needs more sugar, add another 1/4 cup water. If it needs more sugar, add 1/4 cup coconut sugar. Keep careful watch on agar-agar mixture and as soon as it begins to boil, remove pan from heat, and strain mixture through fine wire-mesh sieve into a wet mould. Cool, and chill in refrigerator.
Unmould on to large platter, cut into pieces and serve as a sweet.
The agar-agar when unmoulded, should have two layers, the one below light brown, the top layer clear brown

RESEPI MAKANAN PURE MELAKA...

Ikan Pari Masak Lada   

Bahan2 utk hidangan ni boleh disajikan utk 4 - 5 org aje...

Bahan-bahan
  • 1/2 kg ikan pari (dibersihkan dan dipotong seperti saiz kotak mancis)
  • 5 ulas bawang putih - dimayang
  • 5 ulas bawang merah -dimayang
  • sedikit belacan (pilihan)
  • 3 camca besar cili kisar
  • 1 camca besar lada hitam (ditumbuk 3/4 halus)
  • 3 camca besar minyak utk menumis
  • 2 camca besar asam jawa ( diramas dengan 2 cawan air)
  • 4 helai daun liamu perut
  • 3 camca besar kerisik(kelapa goreng)
  • 2 camca teh garam

Cara-cara
  • Tumis bahan A sehingga garing dan naik bau masukkan bahan B, masukkan ikan pari, tambah 2 cawan air ( berkuah seperti masak asam pedas ), bila mendidih rasa garamnya. sedia untuk di hidang dengan nasi putih panas. sedap juga dimakan sebagai kuah untuk mencicah lempeng.

p/s : kepada pengemar masakan pedas2 ni...selamat mencuba....

Kuih Bakar/Kemboja/Bingka

Ingredients:
1/2 cup pandan juice
1 1/2 cup coconut milk
3 eggs
3/4-1 cup flour
1/2 cup sugar
1/4 tsp salt
Green food coloring
Roaster sesame

Mix everything except bijan in a food processor or blender. Pour the batter into a baking pan. Springkle with roasted sesame on top. Bake in 360 F oven for 1/2 - 1 hr.

Kuih Udang Goreng Alor Gajah

Bahan-Bahan:
3 cawan tepung berserbuk penaik
150 gm udang, sederhana besar
2 biji telur
1 camca teh serbuk kunyit
Garam secukupnya Minyak untuk menggoreng
Air secukupnya
2 tangkai daun sup
Sedikit tauge

Cara:
Tepung dibancuh bersama air. Masukkan telur, udang, tauge, daun sup, kunyit dan garam. Kacau hingga sebati. Panaskan minyak di dalam kuali. Goreng bancuhan seperti menggoreng jemput-jemput. Apabila siap hidangkan bersama kuah kacang atau kuah cili.
