Kak Noor, ni resipi couscous ya..
Moroccan couscous
3 1/2 pound chicken, cut in 6 pieces
4 tbsp vegetable oil
1 tbsp tomato paste
1 large onion, cut into wedges
5 pounds plum tomatoes, quartered
1 tsp black pepper, ground
1 tsp ground turmeric
1 tsp ground cumin
2 1/2 tsp cayenne pepper
5 small turnips, peeled,quartered
4 large carrots, peeled,quartered lengthwise and crosswise
3 zucchini, cut quartered lengthwise then crosswise
3 large potatoes, peeled cut halves
1 sweet pepper, quatered lengthwise then crosswise
1 canned garbanzo beans
water
1/2 tbs salt
3 cups couscous (ready in 5 mins pun ada, lagi senang)
Potong ayam (sizenya suka hatilah) Panaskan minyak dalam periuk besar (heavy base kalau ada). Masukkan ayam dan gorengkan until tukar color, keluarkan dan letakkan ke tepi dulu,masukkan bawang, goreng sampai tukar light color bawang tu. Masukkan tomato paste,sayur, cumin, cayenne pepper, black pepper, tumeric, kacau sampai semuanya bercampur. Lepas tu masukkan air. Tutup periuk dan biarkan mendidih (slow fire) about 20 mins. Bila sayur dah setengah masak, masukkan ayam & garbanzo beans. tutup balik periuk dan masak lagi until everythings is cook. Jangan lupa letak garam ya![](static/image/smiley/default/smile.gif)
Couscous grains (semolina)
Kalau guna semolina express, just tambah air like indications on the box and masukkan dalam micro wave lepas tu leraikan grains dengan tangan atau garpu.
Dalam satu pinggan hidang yang besar, tuangkan semolina tadi dan buat macam satu lubang kat tengah-tengah. Ambik sayur-sayuran & ayam tadi dan tuangkan kat tengah-tengah. Kuah janngan letak banyak-banyak sangat sebab semolina ni akan serapkan kuah couscous ni, so kuah belen tadi tu letak kat another recipient. Kalau nak lagi kick, orang algeria & morrocan grillkan cili hijau pedas dan makan bersama couscous ni.
P/S: couscous ni sedap makan dengan grill meat/chicken/brochette (nanti I write down the recipe for this)

Tgh malam tadi kelaparan, then teringat hang masak ayam lemak cili api, sambal belacan, ikan masin .... oh sedapnyaaaaaaaa |

Chicken Brochette/Chicken Skewer
Chicken meat (potong bite size)
1 sweet pepper - potong dadu
1 onion - potong empat dan bukak satu-satu (macam makan satay punya style tu)
Mushroom - potong dua
Marinate:
Olive oil
Mustard
Fresh/dried herbes :
(thyme, oregano or apa yang korang sukalah even nak letak curry powder pun boleh)
Salt & pepper
Dalam satu mangkuk besar campurkan bahan-bahan marinate, mix everything. Lepas tu masukkan daging & vege tadi. Mix everything dan perapkan at least 1 hr before cucukkan kat lidi satay. Lepas tu grill ajelah. Makan dengan salad or couscous or just like that....
The same recipe can be use for other meat even just to marinate beef or chicken steak, lamb rack... |

IL masak ikan yg dibakar dlm oven pas tu makan ngan buah "fig", then ada ler sauce dia plus some vegetables and rice |

nampak bahan2nya pung dah tahu best..byk bahan tak ada kat umah ni..esok lepas antar anak sekolah nak pi cari bahan la..terasa teringin sungguh2 ni..
jap nak tanya...garbanzo beans tu beans hok macamana yer..adehhh ada ke macam butter beans ?
serbuk cayenne pepper tu..ganti dgn serbuk cili ok tak? |

Kak Noor, garbanzo beans tu sebenanrya kacang kuda, saja je nak gempak..tu guna nama omputih..Saya memang guna serbuk cili untuk gantikan cayenne pepper..lagi power pedasnya. |

cali aku ada kisah pasai kacang kuda ni...
satu ari tu aku makan la hummus ni...rasa sedap pulak..habis tu tanya la kawan arab ni apa benda..dia cakap hummus buat dari kacang...dia bayangkan la rupa kacang tu macammana..dia pun tak tau kacang kuda ni bahasa omputih apadia....dia cakap beli kat kedai pakistan...jadi aku dapat tangkap kacang kuda...so aku pi kedai pakistan minta la kacang kuda ni...aku tak tau omputih pangge apa aku cakap horse bean... lol
rupa2nya sini derang pangge chick pea untuk kacang kuda..hehehe :bgrin: |

Pulut, terlupa pulak nak kasi moussaka punya recipi. NI I kasi yang simple lah ya..
Moussaka
1 large eggplant
1 pound ground beef
Vegetable oil
2 medium onions, chopped
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon thyme

Add salt, seasonings, parsley, tomatoes and bit of water. Cover and cook slowly for 30 minutes. Cool. Brown the eggplant slices in vegetable oil. Sprinkle bottom of a 13 x 9-inch baking dish with vegetable oil. Cover with the eggplant. Spoon meat mixture over the eggplant. Pour Bechamel Sauce over this mixture. Top with cheese and bake at 350 degrees F for 45 minutes.
Bechame Sauce
3 tablespoons butter
3 tablespoons flour
1 1/2 cups milk
2 egg yolks
1/2 teaspoon salt
1/4 teaspoon pepper
Melt butter. Add flour slowly, stirring constantly. Remove from heat. Slowly stir in the milk. Return to heat and stir until the sauce thickens. Beat egg yolks well. Gradually stir yolks, salt and pepper into the sauce. Blend well.

satu lagi nak tanya lah cali, eggpalnt nih, serap minyak mak aiiii.. mau abis separuh botoi.. kira brown nih..brown gitu2 or brown yg betoi2 masak.. pulut penah buat skali, jordan punya resipi.. not into my taste sebab moussaka cheq berenang2 dlm baking pan..try lebanese, depa boh nasi. kering sangat pulak dah.. kira patut dia jadik rupa macam lasagna ka?
sowy lah ya..banyak pertanyaan la pulak.. buat tp dok fail nih kena tanya makcik2 yg expert2 |

Pulut, I kalau buat moussaka ni I slice bulat-bulat (tak nipis sangat kang hancur pulak) then rebus terung tu dalam air bergaram & minyak sikit. Kalau brownkan dulu memang terlalu banyak diserapnya, like you said berenang-renang dalam baking dish. For me so far rebus is the best way to do it. tak terlalu heavy nak digest nanti. KNi tengah grill eggplant, kejap lagi ambik gambar tunjuk kat you ya...

mak aiii cali..sodapnya.. mau kebuloq cheq.. ini rebus dgn ayaq garam then grill ka.. looks very healthy ni..yg ayam tuh brochette jugak ka..
cheq penah masak ayam south yemen resipi cali.. sedap walaupun nasi dah rupa macam buboq |
