ANEKA CHEESE CAKE DAN TIRAMISU

hey Ika
here i ada satu kitchen-tested light cheesecake recipe.....
Cheesecake ni very light and is a very suitable and delicious dessert after a heavy meals,i learned this cake at one of the baking school in Singapore no long ago.......hope you like it.





Light cheesecake

Bahan A : 250 gm cream cheese
              50 ml whipping cream
              100 ml milk
              80 gm butter
Bahan B : 25 gm corn flour
              50 ml milk
Bahan C : 150 gm egg white
              100 gm sugar
              10 gm corn flour
              1 tsp cream tartar
Bahan D :138 gm egg yolk
              1 tsp vanilla essence (opt)

Preheat oven to 150'c
Lined botton and side of a 8 1/2 inch springform tin with baking paper.
Melted all ingredient A over a double boiler(with slow fire) and stir all the time till smooth. Cooled the mixture.
Add all ingredients B into the cooled creamcheese mixture and stir till wel mix,
then add in the ingredients D and continue stir till smooth.
Whisk all ingredients C till "SOFT" peak foam and fold slowly/gently into the cream cheese mixture (be carefull not to over mix it)
Pour the mixture into the prepared tin and bake in the "lower rack" of the oven as "water bath" for abt 30 minutes till the surface of the cheesecake become lightly brown and turn the oven to 125 'c and continue bake for abt 55 to 1 hour.
Cooled the cake in frigde before serve.
Cut the cake with a "warm" sharp knife.

Note that all ingredients must be at room temperature !!!

Resepi ni maklang dapat dr. satu w/site, apa entah..tak ingat.Maklang tak pernah buat sbb family maklang tak suka cheese tapi maklang suka.Kalau maklang buat sapa nak makan.Tak seronok kalau orang tak makan.
Resepi ni maklang rasa dari chef wan...tak tau betul ke idak:stp:

PLAIN CHEESE CAKE

Bahan base
4 cawan biskut Marie (yang dikisar halus)
1 cawan almond (dikisar)
1/2 cawan gula halus
1/2 cawan mentega (dicairkan)

Bahan atas
3 sudu teh tepung kastard
3 sudu teh air
455gm cream cheese
1 1/2 cawan gula kastor
Secubit garam
1 sudu teh esen vanilla
1 sudu teh jus lemon
2 cawan sour cream
6 biji telur (asing putih kuning)
1 sudu teh lemon zest (amik sikit kulit lemon pakai garfu)

Kesiannya maklang, sedih sungguh akak dengar...hehehe... lenkali maklang buat je, pastu panggil je akak, akak bab buat amal jariah cenggini boleh tahan gak...hehehe...:lol  

Memang tak sonok makan sorang2 maklang, lenkali lambai je akak, ha... akak boleh bawak 2-3 kerat geng kat sini dok sekali makan sehidang.. amacam:cak:

Ye ke Jonah....seronoknya kalo dapat berjiran dengan ko.Hari2 bolehlah maklang cuba resepi baru pehtu antar je ghumah ko, amacam!:cak: Hubby maklang ni bukannya jenis pemakan orangnya dan bukanlah peminat kuih2 tradisi:stp: melainkan karipap jer.Anak2 pun cengitu jugaklah cam bapaknya.Selalunya maklang buat pun maklang bagi kat jiran,mak maklang sendiri dan ada lebih lagi bawa kat opis.Dah banyak resepi yang maklang dah cuba, itupun maklang ambik dari thread ni jugaklah...

thank's for the recipe,i have to admit it this light cheesecake do make me :mll:..wil give it a try real soon ...:bgrin:

P/S: correct me if i am wrong isnt this light cheesecake also called cotton soft cheesecake ??:hmm:

to Ika,
actually memang betul...it's also called cotton soft cheesecake but there are many version of making this cake, some recipes use only milk and some use half milk and half whip/double cream,i have try a few in the past and i think(personal taste-bud) this is the best..:ah:...but still...maybe for some other people not...;) for example : my hubby said this cheesecake is too light for him but for my son this light cheesecake happen to be his favorite ..anyway do try

ok..Ika, i rasa this is more like the cheesecake you are looking for....

Continental Cheesecake

NOTE:this cheesecake can be make with or without any base OR any kinds of base like pastry base or digestive biscuits base,if you are making it without using any base,then i suggest steam-bake the cake(so that the cheesecake tak terbakar at the bottom) the pic that i post below show without any biscuits or pastry base,also lined the bottom of the tin with baking paper and butter then dush with a little bit of flour,masa steam-bake tu jangan lupa wrap the bottom of the tin with aluminuim foi.l


Ok, here you go......









Pastry : 1 1/2 cup Plain flour
             1 tsp grated lemon zest
             1 egg yolk ( lightly beaten )
             1/4 cup sugar
             1/2 cup butter
             1/4 tsp Vanilla essence
             A little bit of cold water, about 2 table spoon

Sieve the flour into a mixing bowl, stir in sugar and lemon zest.
Cut the butter into the flour and rub it in lightly until the mixture
assembles fine bread crumbs.
Stir in egg yolk and vanilla essence and knead the dough until
it is smooth. Rest the dough in fridge for about 30 minutes.
Preheat oven to 180'c.
Roll out the pastry and put into a 9 1/2 inch or 10 inch springform tin(bottom and side).
Prick the pastry all over with folk to prevent it from raising.
Bake the pastry for 10 to 15 minutes. Cool.


Cheese filling : 500 gm cream cheese,room temperature
                        4 large eggs (separate yolk and white)
                        1/4 pint or 150 gm of single cream (1 small can of Nestle  cream)  
                        1 lemon zest
                        2 tbsp raisin (opt)
                        5 oz sugar
                        2 tbsp of bread crumbs or 2 oz sponge mix/optima flour


Method :

Soften the cream cheese with K beaten and add in the egg yolks,
1/2 of the sugar and slowly pour in the single cream and mix till well blend.
In another bowl whisk eggs white with remaining sugar till soft peaks then
gently fold in the cheese mixture follow by bread crumbs, lemon zest and raisin.
Pour the mixture into the baked pastry and bake at 180 for 55 to 60 minutes or till
the top become brown. Switch off the oven.
Cool the cheese cake in the oven. (Preferably overnight)
Note:this recipe can be half and bake into a 8 inch tin for abt 40 minutes at 180'c

ni recipe yang mudah dan sedap.....salah satu recipe yang di cuba semasa baru belajar buat cheesecake......

Lemon Cheesecake

250g butternut cookies
80g butter
2 teaspoons grated lemon rind

Filling
250g cream cheese
200g ricotta cheese
1 cup caster sugar
2 tablespoons cornflour
3 eggs
1 tablespoon grate lemon rind
1/4 cup lemon juice
3/4 cup sour cream

Topping (tak bubuh topping juga ok)
500g strawverries
1/3 cup strawberry jam

Base:

1.  Line a 20 x 30 cm rectangular tin with foil.
2.  Process cookies until finely crushed.  Add butter and lemon rind, mix well.  Spoon into the prepared tin, press firmly into base.  Refrigerate 20 mins or until firm.

Filling:

1.  Preheat oven to 180 degrees Celcius.  
2.  Beat cheeses until smooth.  Add sugar and cornflour, beat until smooth.
3.  Add eggs one at a time, beating well after each addition.
4.  Add rind, juice and sour cream, beat until smooth.
5.  Pour mixture into prepared tin.  Bake 50 minutes or until just set; cool, refrigerate until firm.

Topping (Optional):
1.  Arrange strawberry halves on top of cheesecake.  Heat jam over low heat until melted, brush over strawberries.  Refrigerate to set.

Hehehe... maklang...  sebenarnya akak ni tak minat gak kuih muih manis2 tu.  Cepat muak.  Tapi kalau manis bergoreng tu, macam keria ke, ok gak.  

By the way, maklang dok mana?  Eh, rasa macam maklang akak lah pulak...

yg bentuk gini plak dinda salu gak beli..lagipun murah jek tak sampai RM10..kire berbaloilah..tapi klo beli 1 mmg tak puas kene beli 2-3 lagi sbb ianya tersangat2lah enak dan geboooo!!! yum yum!!!

I have been making a lots of cheesecake this pass few years and i would like to share this simple and creamy cheesecake recipe with you guys here,i believe semua mesti ada cheesecake recipe yang tersendiri...:ting:
so this one is mine....maybe other's have almost the same recipe as mine here...by the way check it out





Baked creamy cheesecake

250 gm Disgestive biscuits,blend in the food processcerr till fine and smooth
125 gm butter,melted
2 tbs sugar
Mix all ingredients together and stir till wel mix,then press it onto the bottom and side of a 8 inch springfoam tin.
Chill in fridge while prepare the filling.

For the filling:
500 gm cream cheese
150 gm sugar
4 eggs (m),lightly beaten with a folk
1/4 cup of whipping/double cream
2 tbs lemon juice
1 tsp vanilla essence

Preheat oven to 180'c.
Cream the cream cheese and sugar till light.(carefull not to over cream the mixture)
Stir the lightly beaten eggs in (stir in bits by bits with a spatula till wel mix),then follow by adding the lemon juice,vanilla essence and cream,stir till wel blend.
Pour the filling onto the prepared base and bake in the oven for abt 55 to 1 hour.
Cool the baked cheesecake in the oven for 1 hour before taking it out to the room temperature.
Wel chill before serve....

aku , kalau bab2 cheese ni...cepat aje nak try....alamat apam tukaz tu kena turun takhta la...lol:lol...
