BELACAN DAN KANDUNGAN PROTEIN


Hampir 90 peratus belacan diperbuat daripada udang. Selebihnya atau 10 peratus lagi digaul dengan garam. Ianya penting kerana garam merupakan bahan awet yang baik. Lebih-lebih lagi apabila proses pengeringan dilakukan. Sekiranya garam kurang, belacan tidak terhasil dengan baik. Ia cepat busuk kerana berlaku penguraian protein. Asalnya diperbuat daripada udang, maka belacan menyumbang sumber protein yang tinggi. Kandungan nilai proteinnya di antara 28 hingga 40 peratus. Bagaimanapun jumlah protein bergantung kepada jumlah belacan yang diambil. Lazimnya terlalu sedikit kerana kita makan belacan dalam kuantiti yang sedikit. Udang yang sesuai dibuat belacan terbahagi kepada beberapa jenis iaitu udang geragau ataupun udang baring.Geragau halus (krill) dan udang halus amat kaya dengan omega 3 dan astaxanthin.
