Answer: the pear was harvasted when it was still a bud and put into the bottle. liquor was added and the pear "grow" inside the bottle. it some kind of preservation process. it is same like how the process pickles except that cucumber and vinegar is used. the crunchiness of the cucumber is still mantain .
