Chilies and garlic potatoes



Ingredients
450g potatoes, peeled and washed
1/2 tsp black mustard seeds
1/2 tsp cumin seeds
4 cloves garlic, crushed
1/2 tsp chilli powder
1/2 tsp turmeric powder
salt to taste
3-4 tbs cooking oil

Direction
1) Cut the potatoes to the thickness of french fries.
2) In a large frying pan, heat the oil over a medium heat.
3) Add the mustard seeds and then the cumin. When the seeds start popping, add the garlic and allow it to lightly brown.
4) Remove the pan from the heat and stir in the chilli powder and turmeric.
5) Add the potatoes and place the pan back on the heat. Stir and turn up the heat to medium.
6) Add the salt and stir. Cover the pan and cook for a few minutes and stir again. Continue to do this until the potatoes are cooked through and lightly browned. Remove and serve hot.

Parsley and walnut pasta





Ingredients
500g spaghetti
1 clove garlic
50g walnut pieces
large handful fresh parsley, including stalk
2 tablespoons sundried tomato paste
1 tablespoons pine nuts
3 tablespoons olive oil
25g fresh grated parmesan

Directions
1) Cook the spaghetti according to pack instructions.
2) Whizz all the remaining ingredients, except for the parmesan, in a food processor to make a coarse paste. Stir in the parmesan and season to taste. Drain the spaghetti and toss in the herby pesto.
3) Serve with extra chopped parsley.

Chicken Pomegranate Salad



Ingredients
1/2 cup pomegranate sacs
1 small can diced pineapple, drained
1/2 roast chicken, diced
4 stalks spring onion, chopped

Dressings
1/2 cup mayonnaise
1 tbsp soya sauce
1 tbsp sesame oil
Salt and pepper to taste

Directions
1) Combine dressing ingredients together. Season with salt and pepper.
2) To serve, combine pomegranate, diced chicken, spring onions together and then toss in with dressing.
3) Salad can serve chilled.
