Parsley and walnut pasta
Ingredients
500g spaghetti
1 clove garlic
50g walnut pieces
large handful fresh parsley, including stalk
2 tablespoons sundried tomato paste
1 tablespoons pine nuts
3 tablespoons olive oil
25g fresh grated parmesan
Directions
1) Cook the spaghetti according to pack instructions.
2) Whizz all the remaining ingredients, except for the parmesan, in a food processor to make a coarse paste. Stir in the parmesan and season to taste. Drain the spaghetti and toss in the herby pesto.
3) Serve with extra chopped parsley.
